An Interview with Charleston Cake Sculptor Julie McAllister

Meet Julie McAllister

We partnered with Charleston-based cake artist Julie McAllister for a Masters-inspired dessert moment that left us speechless. Known for her lifelike, sculptural cakes that celebrate Southern storytelling and impeccable technique, Julie created a golf-themed cake so realistic, we had to look twice.

Through a thoughtful Q&A, Julie shared more about her creative process, her baking roots and what’s next in her sugar-artistry journey.

What inspired you to become a baker, and how did your journey begin?

I have been a lifelong hobby baker, which was entirely self-serving because I inherited my mother's never-ending sweet tooth. I always loved to try new baking techniques, and while I was in grad school I decided to give cake decorating specifically a whirl.

How would you describe your signature baking style or aesthetic?

I am a Charleston-based hyperrealistic cake artist known for crafting breathtakingly lifelike confections that capture the elegance and charm of the South—think a chinoiserie vase adorned with delicate sugar flowers or an oyster roast so impeccably sculpted, it invites a second glance. Each creation is a masterful illusion, blending impeccable technique with a deep appreciation for lowcountry heritage and hospitality.

What’s one baking tip or trick you swear by?

I almost always bake my cakes in sheet pans, then cut out my layers from there. The easiest trick for perfectly level and evenly baked cake layers every time!

What’s next for you as a baker? Any upcoming projects or collaborations we should look out for?

I have been fortunate to have a lot of teaching opportunities over the past year teaching hyperrealistic cake artistry workshops, and I'm excited to be able to offer some digital teaching options very soon so people can learn and create from anywhere. And also continuing with more in-person workshops—I'll be popping up in Georgia, Alabama and of course, South Carolina in the coming months.
