Olive Oil Almond Cake

Almond cake with whipped cream and berries

Instructions

  1. Preheat oven tp 350˚F and grease and line a 8" round cake pan with parchment paper.
  2. Rub sugar and lemon zest together in a mixing bowl to release the lemon zest oils.
  3. Add milk, oil, lemon juice, vanilla and almond extracts, and almond flour to the bowl and whisk to combine.
  4. Stir in flour, baking powder, baking soda and salt.
  5. Spread the batter into the prepared cake pan and bake for 30 minutes until golden brown.
  6. Cool for 10 minutes then remove from the cake pan and cool completely on a wire rack.
  7. Serve with whipped cream and berries.
